CARMELITA COOKIES




INGREDIENTS

  1. 2 ½ cup flour
  2. 1 teaspoon baking soda
  3. 1 ½ teaspoon cornstarch
  4. ½ teaspoon salt
  5. 1 cup butter melted
  6. 1 ¼ cup brown sugar packed
  7. 2 teaspoon vanilla
  8. 1 egg
  9. 1 egg yolk
  10. 1 ½ cup chocolate chips
  11. 1 ½ cup quick oats
  12. 18 caramels Kraft, individuall wrapped, cut in half
  13. salt in a grinder

INSTRUCTIONS

  1. Preheat oven to 325 degrees.
  2. Combine flour, baking soda, cornstarch and salt. Set aside.
  3. Combine butter, brown sugar, vanilla, and egg until just slightly beaten.
  4. Slowly incorporate dry ingredients. Fold in chocolate chips and oats.
  5. Make small dough balls, press in the middle with your thumb and add a caramel. Press another dough ball around it to encase it. Optional: use a cookie scoop, dividing it into halves to add caramel to the middle. Crack salt on top.
  6. Bake 10-12 minutes, until golden brown.
